Thanksgiving Turkey Burger

Ingredients:

  • 1 pound ground turkey
  • 1 teaspoon Herbes de Provence
  • 3 ribs celery
  • 1/2 yellow onion
  • 2 carrots
  • 2 diced granny smith apples
  • 1/2 cup diced, cooked pancetta
  • 6 cups cubed, day-old brioche bread
  • 1/2 pound butter
  • 2 cups chicken stock
  • rosemary
  • thyme
  • oregano
  • sage
  • 1 can cranberry sauce
  • 1 cup mayonnaise
  • 2 tablespoon olive oil

Directions:

  1. Add Herbs de Provence to turkey meat mix and make 2-8 oz patties
  2. In a skillet, add 2 tablespoons of oil, Cook turkey on medium high heat 5 minutes per side
  3. In a food processor add carrots, celery, onion and pulse until finely chopped
  4. In a sauce pot add onion, celery, carrot mixture, stock, butter, herbs and bring to a boil
  5. In a separate bowl add cubed bread, diced apples, and pancetta
  6. Pour stock mixture over bread and gently mix together
  7. In a small bowl mix together cranberry and mayonnaise
  8. Add the stuffing mixture to a waffle maker and cook
  9. Add turkey patty to cooked waffle and add cranberry mayo
