Ingredients:
- 1 pound ground turkey
- 1 teaspoon Herbes de Provence
- 3 ribs celery
- 1/2 yellow onion
- 2 carrots
- 2 diced granny smith apples
- 1/2 cup diced, cooked pancetta
- 6 cups cubed, day-old brioche bread
- 1/2 pound butter
- 2 cups chicken stock
- rosemary
- thyme
- oregano
- sage
- 1 can cranberry sauce
- 1 cup mayonnaise
- 2 tablespoon olive oil
Directions:
- Add Herbs de Provence to turkey meat mix and make 2-8 oz patties
- In a skillet, add 2 tablespoons of oil, Cook turkey on medium high heat 5 minutes per side
- In a food processor add carrots, celery, onion and pulse until finely chopped
- In a sauce pot add onion, celery, carrot mixture, stock, butter, herbs and bring to a boil
- In a separate bowl add cubed bread, diced apples, and pancetta
- Pour stock mixture over bread and gently mix together
- In a small bowl mix together cranberry and mayonnaise
- Add the stuffing mixture to a waffle maker and cook
- Add turkey patty to cooked waffle and add cranberry mayo
